How I love banana bread! Banana bread is one of my favorite things to make when our bananas have gone brown. I love to make banana bread because it is so delicious and then wonderful smell that fills our home.
The other day I made some avocado pancakes for my family. The pancakes came out super moist. Well, I didn’t find the pancakes tasted as good as what I was expecting, haha. However, since I was out of sour cream and Greek yogurt, which I usually use to bake banana bread, I thought I should use an avocado to bake my banana bread. I have never used avocado in my banana bread before and I was thinking my banana bread might come out very moist as well! This was really one of those new experimental recipes that I have been trying to test because I did not look up any avocado banana bread recipes on the internet before I made it.
And guess what! The avocado banana bread came out ultra moist and yummy. My whole family absolutely loved it! The bread still tastes like banana bread and it doesn’t have an overbearing avocado flavor that I thought it might have. The avocado really just did a great job of keeping the bread moist and adding a little bit of additional nutrients to the bread.
To make this avocado banana bread, you will need all-purpose flour, ripe bananas, avocado, brown sugar, eggs, unsalted butter, vanilla extract, baking soda, baking powder, salt, and pecans (optional).
First, you will need to combine 1 and 1/2 cups flour, 1 tsp baking soda, 1tsp baking powder and 1/2 tsp salt. Slightly whisk them together. Set aside.
In another bowl, put 3/4 cup of brown sugar in the melted butter. Whisk them to combine.
Crack in 2 eggs.
1 tsp vanilla extract.
Mix them all
Next add the flour mixtures, slightly stir them to combine.
Here comes all the good stuff, just use a fork smash in the banana and avocado. If you want your bread to be even more moist, you can blend them in a blender but doing this method you won’t have the little banana and avocado chunks inside your bread after you bake it. So you can decide which way you would like to proceed.
Now stir in the avocado and banana, just remember don’t over mix the batter.
At last, throw some chopped pecans in. Just use whatever nuts you or your family likes or you can totally avoid put in any nuts. I usually will add walnuts or pecans because my husband loves the texture and it adds a little bit more substance to the bread.
Bake the bread in greased pan for 60 minutes at 350F degree.
